Nutrition Corner Plantain
The term plantain is loosely applied to any banana cultivar that is eaten when cooked. When ripen the starches are converted to sugar and could be eaten raw.
Here in Nigeria, plantain is an all-season staple food, treated as a starchy fruit with a relatively natural flavor and soft texture when cooked. Whether green or ripen, plantain can be eaten fried, baked, cooked, boiled, microwaved or grilled over charcoal either peeled or unpeeled.
When ripen, fried plantain tends to caramelize, turning a golden-brown color.
Plantains are also dried and ground into flour and eaten as either flour meal or plantain fufu.
Unripe plantain when sliced and fried in deep oil, are turned into chips for pleasurable meal time, and can be used as a money-making venture.
